Funny story about this little muffin....
Every now and then I like to have a little tea party set up for my girls when they come home from school on Fridays. Today I thought I would make some muffins from scratch which I have never done before! I went to the Ghiradelli website...grabbed a double chocolate chip muffin recipe and away I went. I have always been told to check to make sure you have all the ingredients before you start baking...Well, I'm too impatient for that so I realized I didn't have one important ingredient: sour cream. I decided to substitute vanilla yogurt instead. The recipe called for one stick of butter room temperature, so I nuked my butter and threw it in the mixing bowl. I turned the mixer on medium and added the sugar. It never looked smooth and frothy...just lumpy...oh well. I added the eggs and yogurt and mixed...it looked like scrambled eggs b/c of the lumpy butter. Forged on...Spooned them into the baking cups and it looked like this:
Do you see the little white lumps? Yuk...even my son said yuk:
You can't see his expression...but believe me he said: "You are making yucky stuff mom!"
Well then I tasted it.....BIG YUK! Not very sweet at all...so I doubled the vanilla and topped the muffin off with some coarse vanilla sugar. At this point I decided I might as well bake them just to see how bad they are.
Low and Behold...they were amazing!!!! It didn't matter that the butter looked lumpy or the batter was not as sweet as I thought it should be...it magically came together in the oven and became something wonderful. This is what draws me to baking...the trials and errors but the end result can actually be something amazing....and of course it makes these three smile!

They said mom...you are the best baker in the world...I chuckled thinking...should I tell them this was purely an accident....NAAAAAAAH!
Here's the recipe from Ghiradelli.com with my adaptations....(I'm sure this recipe is out there...but I felt I made up my own)...We'll call it Accidentally Really Good Chocolate Chip Muffins!
1 cup Semi-Sweet Chocolate Chip Muffins
1/2 cup Unsweetened Cocoa
1 3/4 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup granulated white sugar
2 large eggs, lightly beaten
1/2 tsp vanilla extract ( I doubled this and used 1 tsp madagascar vanilla)
1 cup sour cream( I substituted fat free vanilla yogurt)
1/2 cup of butter, at room temperature
I added vanilla sugar on top
Preheat oven to 400 degrees. Line a muffin pan with paper liners. In a medium bowl sift together flour, cocoa, baking soda, baking powder, and salt.
In a large bowl with an electric mixer, beat together butter and sugar on medium speed until creamy. Add the eggs and vanilla and beat until light and fluffy. Stir in the sour cream(or yogurt) and 3/4 of the chocolate chips. Add the flour mixture, stirring just until incorporated. Spoon the mixture into the muffin cups, filling each cup about three quarters full. Sprinkle the tops of the muffins with the remaining 1/4 cup of chocolate chips. I topped off with vanilla sugar. bake for 20 minutes. Enjoy!
