I love putting a table together full of desserts! My daughter Madi and I love love love to bake! This table has lavender cupcakes,mini cheesecake bites, oversized cupcakes with real buttercream frosting,gummy egg candies,and my absolute favorite: the best chocolate mousse ever! Here's what you do to make a party happen in your tummy: Chocolate Mousse
2 cups milk,2/3 cup heavy cream,1 cup of sugar,4 large egg yolks,3 Tbl cornstarch,pinch of salt, 4 ounces bittersweet chocolate,4 ounces semisweet chocolate, 2 tsp. vanilla.
In a large heavy saucepan, combine all but 2 tbl of the milk with the cream and sugar. Bring the mixture to a boil over medium heat, stirring to dissolve the sugar. Meanwhile, in a large bowl combine the egg yolks, cornstarch, salt and the remaining 2 tbl milk and whisk until smooth. Whisking constantly, gradually pour about half of the hot milk into the egg yolk mixture. Pour the warmed yolk mixture into the saucepan of hot milk and bring to a very gentle boil over medium-low heat, whisking constantly. Boil, whisking, for 1 minute. Remove from the heat and whisk in the chocolate until it is completely melted. Transfer the filling to a bowl and whisk in the vanilla. Cover with plastic wrap directly touching the surface to prevent a skin from forming and let cool to room temperature. When completely cooled add about 1/4 of a container of cool whip and blend. Serve it up in whatever you would like...I love the presentation of martini glasses and garnish with rasberries and mint leaves.
